Mexican food in Berlin, reimagined – but what does that actually mean?
The founder of TACO & GRINGO, Carlos Hernandez Toimil, hails from Oaxaca, Mexico, and grew up immersed in the flavours of Mexican cuisine. When he arrived in Germany, he found one thing missing above all else: the true taste of home.
This led him to start experimenting with traditional recipes at an early age, combining tacos, quesadillas, and classic Mexican ingredients. His mission was always clear: to preserve the original soul of the food while making room for something new.
These experiments eventually became the recipes served at TACO & GRINGO today. Among them is our Salsa Taquera Toimil – named after the family and based on a deeply rooted tradition that stretches all the way back to his great-grandmother.
